To cut, copy and paste and open new windows in the web browser of my Nokia e61i I built a site called http://mobitol.com which pops the text of whatever site you want into a text box so that it can be edited. Not sure if it will work with all s60 phones but it should. I'd be interested to hear if it works for you.
